Savvy Saver's Fruity Bubble Crunch

This is Savvy Savers Mothers recipe... 




FRUITY BUBBLE CRUNCH
(Serves 6)

1 large tin fruit (e.g. peaches or apricots)
1/2 cup sugar
1/2 cup shredded or desiccated coconut
1 egg
3 cups rice bubbles

Drain fruit and spread over base of a baking dish. In a large mixing bowl, mix together sugar, coconut and egg by hand until creamy. Mix in rice bubbles and stir gently until coated wtih the creamy mixture. Spread topping over the fruit. Bake in a moderate oven for approx. 15 minutes or until topping is golden. Serve with your choice of cream, custard and/or icecream.

Brilliant idea! I need to use up 3 packs of Mother Earth brown rice bubbles that my son no longer wants to eat. Will try this recipe this week. Thanks so much.
