Sesame Noodles


This is tonight's dinner, it was Sesame Noodles. It is such an easy and filling meal. To make it in a hurry you need to have the secret ingredient made before hand and frozen. I made that up today and it used some and froze the rest. You steam a small cauliflower, include the stem and whizz up two raw zucchinis, add lemon juice and then the cooked cauli. Puree up. Here's what it looks like:

Cook noodles or thin spaghetti (500g) and drain in sink. In the bowl you are going to serve it in mix
1 TBS brown sugar
1 TBS sesame oil
3 TBS soya sauce
1/4 cup tahini (I preferred the hulled for favour although unhulled is better for you)
1 cup of the cauli puree
1/4  cup apple cider vinegar
3 teaspoon crushed garlic or 3 cloves
As I'm feeding lots of men I cooked chicken breast in teryaki sauce and sliced up
Mix this together and add cooling noodles, toss and coat.

Add sesame seeds and spring onions on top. Very quick if puree is already cooked and no meat is added, but even so it didn't take long :o)
